My mom, who has a huge corn allergy, has never had any problems with the Bobs Red Mill brand Xanthan gum. In my opinion, it's processed down enough that for us it is okay. I have never tried guar gum. I will soon to see if it works. If you try it let me know how it goes! The Spectrum is incredible, and soooo handy. Another option is to make your own baking powder with Arrowroot Powder, Cream of Tartar and Baking Soda. Many sights have the recipe for making your own baking powder.
